Made with the same botanicals that are used in pickling. Such as coriander seeds, fennel seeds, bay leaf, black and white pepper, caraway, fresh lemon zest and of course DILL. For that final special touch, we had to hurt some pickles, which go into the botanical basket where the gin vapours flirt with the dills. Long story short, this is a savoury gin that is perfect in a Pickletini or a pickle gin & tonic, or a Bloody Mary or even a Pickle Spritz. And all of the above is amazing with food, we love food and we love cocktails. So if you're like us, have a Pickletini and make sure there are snacks around.

The Pickletini Kit
1 x 700ml bottle of BIG DILL Pickle gin
1 x 175ml bottle of Dry vermouth
1 x 500ml jar of sweet & spicy pickles
Isn't it annoying when you go to the kitchen to make yourself a sandwich and just as you're about to finish assembling your work of art, you realize there are no pickles to complete the picture? Well that won't happen with the Pickletini kit, because in the kit you've got dilicious sweet & spicy pickles to make sure you can have the perfect sandwich and as a bonus, you can make a Pickletini with it, trust me, they're great together.

Pickletini
60ml Big Dill Pickle Gin
15ml Dry Vermouth
30ml Pickle Brine
Combine all ingredients in a mixing vessel with ice, stir for a minute and strain into a chilled cocktail glass. Garnish with a pickle chip.

Unmistakably Kiwi Rum
At Bayside Rum Company we take inspiration from our surroundings to craft an unmistakably kiwi rum. The Antipodean influence of New Zealand affects our rum from the ingredients we use, by trying to keep it as local as possible, through to the processes we employ right from sourcing our ingredients to fermentation, ageing, and to the design. The result is a modern rum that reflects New Zealand’s culture and its people while respecting the highest standards of traditional rum production.
The Making
While Bayside Rum respects the traditional production of original rum distilling regions, we wanted to make sure it’s also unique to New Zealand. We use a quintessential Kiwi ingredient as our fermentation starter - the mighty kumara! It gives Bayside Rum an earthy note and helps kickstart the fermentation faster. After the fermentation, we transfer the fermented molasses into a hand made alembic pot-still and distill it twice. We’ve sourced the best local ex-red wine barrels and let the spirit rest in them for at least three months. The resting period doesn’t only impart new flavours from the barrel, it also lets the spirit breathe - making it smoother. The result is a rum unique in colour and flavour merging the tropical notes of a freshly distilled molasses spirit with red fruit and spice notes of ex-red wine barrels.


The Creators
We are a small family run business. Egor has spent the majority of his professional life in F&B spanning three countries and numerous accolades. Egor looks after what’s inside the bottle and makes sure the rum satisfies the highest standards of quality before it goes in the bottle. Anna looks after the visual side with experience in arts, design, magazines and e-commerce. Anna brings a wealth of knowledge and a creative flair to Bayside Rum Co. Matilda, our daughter, inspires us to keep creating, so she can join the family business one day and be proud to do so.
